What the Dose Actually Does
A metered drop of liquid nitrogen lands in your headspace immediately before the closure arrives. It boils instantly, expanding into gas that pushes the air out through the still-open finish.
Your closure then traps a nitrogen headspace with a slight positive pressure. Oxygen contact with your product drops to a fraction of what an air-filled pack carries, and nothing has been added to the product itself.

Why the Structural Benefit Is Smaller on Glass
On a thin-walled container, internal pressure is what stops the pack collapsing in a hand, so dosing lets a filler take material out. Your glass bottle does not need that help.
So judge dosing on shelf life alone when your pack is glass. The oxygen reduction is real and the stiffening is a bonus you were not relying on, and a 750 ml (25 oz) oil bottle gains from the first without needing the second.

Where Dosing Goes Wrong
Timing is the first failure. Your dose has to land close enough to capping that the gas is still displacing air, and a dose applied too early leaves your headspace back to atmosphere by the time the closure lands.
Volume is the second. Too much nitrogen builds pressure your closure and your liner were not chosen for, and on a vacuum-sealed 330 ml (11 oz) jar it can prevent the vacuum forming at all.
